Salmon Poke Bowl

METHOD

Step 1

Place 1 cup of sushi rice into a cooking pot, wash the rice 3-5 times, and rinse. Add ¼ cup of water. Cook over medium heat until boiling, then cover with a lid and reduce the heat to low. Cook until the water is absorbed. Add 2 tbsp rice vinegar, 1 tsp white sugar or stevia, and ½ tsp sea salt. Mix well.

Step 2

Place a layer of sushi rice into a bowl, then add diced fresh cucumber, shredded carrot and corn kernels (I roasted them a little bit in a pan)

Step 3

Add Tassal Cooked Smoked Salmon Peppercorn to the bowl, and decorate with avocado, sesame seeds, and edamame beans.

Step 4

Finish decorating with spicy mayo. Serve with your favourite dipping sauce.

Tassal Cooked (Hot Smoked) Tasmanian Salmon 150g Cracked Peppercorn
1 cup sushi rice
½ cucumber, diced
½ carrot, shredded
2 tbsp Corn Kernels
Nori
1/2 avocado
Spicy mayo
Edamame Beans
Sesame seeds
