Roasted Lemon & Butter Salmon with Radicchio Summer Salad

METHOD
- Step 1

Pre-heat oven to 170°C. Place salmon on baking tray lined with baking paper and roast in pre-heated oven for 15 -18 mins.
- Step 2

Remove Salmon from oven and allow to rest for 5 mins prior to transferring to a large serving platter.
- Step 3

Combine all the prepared salad ingredients in a large serving bowl and toss well. Dress salad just prior to serving. Serve salmon garnished with micro herbs and dill with the salad and enjoy!

500g Tassal Fresh Tassie Salmon Side with Lemon & Herb Butter
1 sml radicchio lettuce, washed
5 sml chat potatoes, boiled & halved
1 sml red capsicum, thinly sliced
1 sml red onion, thinly sliced
1 red grapefruit, segmented
1 hand full, snow pea sprouts
120ml red wine vinaigrette to serve
micro herbs & dill leaves, garnish
lemon wedges, to serve
