Green Breakfast Bowl with Poached Egg Salmon Bacon

METHOD

Step 1

Heat half the oil over medium-high heat in a non stick frying pan. Add slices of halloumi and cook for approximately 2 minutes each side or until a deep golden brown colour. Remove from pan and keep warm. Add remaining oil to frying pan together with the slices of TASSAL Salmon Bacon and cook for approximately 2 minutes each side or until hot.

Step 2

Arrange spinach leaves on the base of 2 large serving bowls. Top each with half an avocado, 2 slices of halloumi, slices of TASSAL Salmon Bacon and a poached egg.

Step 3

Finish with crumbled goat cheese, flaked almonds and a sprinkle of dukkah. Drizzle dressing over breakfast bowl and garnish with a lemon wedge and a few fresh herbs. Serve immediately.

Ingredients:

2 tsp olive oil

4 slices halloumi

140g TASSAL Salmon Bacon

200g baby spinach leaves, washed

1 avocado, cut in half with stone removed

2 eggs, poached

2 tbsp flaked almonds, toasted

100g marinated goats feta cheese

2 tsp lemon & herb dukkah

4 tsp Greek style yoghurt, feta & dill dressing or, dressing of choice

2 lemon wedges

fresh herbs, to garnish
