Coconut & Kaffir lime Salmon with Vietnamese Noodle salad

METHOD

Step 1

Pre-heat oven to 200°C.

Step 2

Boil water and place in a bowl, add vermicelli noodles to hot water and leave for 2 mins. Drain noodles and refresh under cold tap water. Set aside.

Step 3

Place salmon on a lined baking tray and bake for 8-10mins.

Step 4

Mix dressing ingredients together. Combine noodles with carrot and cabbage, and pour dressing over the top and toss.

Step 5

Serve salmon with noodles salad, lime wedges and enjoy!

Ingredients:

260g Tassal Marinated Tassie Salmon in Coconut & Kaffir Lime
125g vermicelli rice noodles
1 cup purple cabbage, thinly shredded
1 carrot, thinly shredded
Dressing:
2 Tbsp lime juice
2 tsp soy sauce
½ tsp sesame oil
2 tsp caster sugar
2 lime wedges, to serve
