Sweet Plum Salmon Stir Fry
Ingredients
2 Tassal Tasmanian salmon portions, skin off, diced
1/3 cup sweet plum sauce
1 Tbsp olive oil
1 floret of broccoli, chopped into small florets
½ zucchini, thinly sliced
½ red capsicum, thinly sliced
1 medium sized carrot, thinly sliced
1 cup rice, cooked as per packet instructions
Method
Coat salmon with sweet plum sauce. Heat a wok over medium heat, adding olive oil. Add salmon to wok, stir fry for 2 minutes, then add chop vegetables and cook for a further 2 minutes. Serve immediately over rice.
