Souvlaki Salmon Party Platter

METHOD

Step 1

Preheat oven to 170°C. Place salmon fillets in a large shallow plate. Mix olive oil, garlic, oregano, balsamic vinegar, chilli flakes, lemon and salt in a small bowl. Pour marinade over the salmon and gently rub to evenly coat the salmon on all sides. Cover with cling film and allow to rest for 20 mins.

Step 2

Place salmon fillets on a lined baking tray with the whole head of garlic. Roast in the oven for approximately 15 mins. Place salmon fillets under a hot grill for 2-3 minutes to get the char grill look on the salmon.

Step 3

Mix all ingredients for the yoghurt sauce in a bowl reserving a small amount of grated cucumber and chilli flakes to sprinkle on top.

Step 4

Arrange lettuce leaves on a large platter. Place cooked salmon fillets down the centre of the platter. Place the yoghurt sauce bowl, cherry tomatoes, asparagus, whole roasted garlic, blood orange and lemon wedges around the salmon on the platter. Serve immediately with pita bread and enjoy!

Ingredients:

For the Salmon
2 x 460g Tassal Fresh Tassie Salmon, skin-off portions (8 portions)
¼ cup extra virgin olive oil
8 garlic cloves, minced
1 tsp dried oregano
1 tsp balsamic vinegar
1 teaspoon red chilli flakes
juice of 1 lemon
1½ tsp sea salt flakes
whole head of garlic with the top trimmed

For The Spicy Yoghurt Sauce
1 cup Greek yoghurt
1 small cucumber, deseeded and grated
2 garlic cloves, minced
1 teaspoon red chilli flakes

To Serve
Cos lettuce leaves, cherry tomatoes, pan braised asparagus, blood orange slices, lemon wedges, pita bread.
