Smoked Salmon, Tomato & Basil Muffins
- Step 1
Place flour, salt, TASSAL Hot Smoked Salmon, tomatoes, cheese and basil in a bowl and mix lightly. Add butter, milk and eggs and mix until well combined.

Spoon mixture into a well greased 12 x ½ cup muffin pan and sprinkle tops with a little extra parmesan cheese. Bake in a pre-heated oven of 180ºC for 20–30 mins or until golden and cooked. Allow to cool slightly before finishing.
- Step 3
Beat cream cheese until soft, then fold in chives and season with black pepper. Cut muffin tops off and spread approximately 1 tablespoon of cream cheese in the centre. Top with ½ slice of TASSAL Smoked Salmon and replace the muffin top. Serve warm or cold and enjoy!
150g TASSAL Hot Smoked Tassie Salmon, Natural, broken into flakes
2 cups SR flour, sifted
100g semi-dried tomatoes, chopped
½ cup grated parmesan cheese
¼ cup chopped basil leaves
100g butter, melted
⅔ cup milk
3 eggs, lightly beaten
Extra grated parmesan cheese
250g cream cheese, at room temperature
1 tsp chopped chives
freshly ground black pepper
100g TASSAL Smoked Tassie Salmon, cut into 12 pieces
