Salmon Patties

METHOD

Step 1

Dice salmon into cubes and chop onion and parsley.

Step 2

In a blender, combine salmon, onion and parsley with eggs and lemon juice and blend into a paste mixture.

Step 3

Shape mixture into patties, coat lightly in breadcrumbs and pan fry for 6-8 mins, turning once, until golden. Serve with coleslaw.

260g Tassal Fresh Tassie Salmon, skin off
1 red onion
1 Tbsp parsley
2 eggs
1 Tbsp lemon
1 cup breadcrumbs
coleslaw, to serve
