Salmon with Stir Fried Vegetables
- Step 1
Pre-heat oven to 180°C. Season salmon portions lightly with salt and pepper.
- Step 2
Place bean shoots, red capsicum and zucchini into a wok and stir fry for 2 minutes. Cook noodles as per packet instructions. Stir through soy sauce and noodles
- Step 3
Remove salmon from oven when cooked, and rest for 2 minutes. Serve with vegetables and noodles.

- 20g bean shoots
- ½ red capsicum, sliced
- ½ small zucchini, sliced
- 150g Singapore noodles
