Salmon Sashimi

METHOD

Step 1

Pre-heat oven to 150°C.

Step 2

Cut salmon into large chunks.

Step 3

Toss salmon chunks in the taco seasoning.

Step 4

Place taco shells in the oven to warm or place soft tortillas in the microwave covered for 20 seconds on 100% power.

Step 5

Heat oil in a non-stick frying pan over a medium heat and pan fry the salmon for 2-3 minutes each side until golden brown. Drain on absorbent paper.

Step 6

Fill the base of each taco shell with a little sauce, a lettuce leaf, sliced tomato, sliced avocado and 2 or 3 chunks of salmon.

Serve with Taco salsa and wedges of lime.

Ingredients

  • 200g Tassal Salmon Portion – skin off, sliced thin

Salad:

  • 1 lemon, juiced
  • 3 radishes, cut julienne
  • 30g beanshoots
  • 2 tbsp coriander leaves
  • 15g pickled ginger, chopped
  • 1 red chilli, deseeded and thinly sliced
  • 2 tbsp sesame seeds, toasted
  • ½ apple, cut julienne

Honey and Soy Glaze:

  • 50g honey
  • 75ml sweet soy sauce (kechup manis)
  • 100ml light soy sauce
  • ½ cinnamon stick
  • 1 star anise
  • 2 cloves
