Salmon Noodle Muffins for Kids

Step 1

Cook noodles following packet directions, without seasoning. Drain and place in a large bowl. Allow to cool.

Step 2

Place grated zucchini into centre of paper towel, wrap up and squeeze tightly over bowl to remove excess fluid.

Step 3

Combine flour, corn, zucchini and smoked salmon. Beat eggs together, stir into noodles, and then add and combine salmon mix.

Step 4

Pour mixture into a muffin tray, top with grated cheese. Bake for 20 minutes at 180°C, serve hot or cold and enjoy!


  • 150g Tassal Smoked Tassie Salmon, diced
  • 2 packs of 2-minute noodles
  • 1 zucchini, peeled and grated
  • ½ cup corn kernels
  • 3 eggs
  • ¼ cup plain flour
  • 1 cup grated cheese
