Salmon Nicoise Salad
- Step 1
Place potatoes in the MicroSteamer™ Base.
- Step 2
Fill the MicroSteamer Water Tray with 400ml of cold water, place base on top of Water Tray, Cover and microwave at 800 watts for 15 mins. Remove MicroSteamer from the microwave, leave the Cover on and set aside for 1 minute.
- Step 3
Add beans to the Steamer Base with potatoes. Place the salmon in the Colander Tray and place on Base. Cover and microwave at 800 watts for a further 4 mins or until potatoes are cooked through. Beans should still have a little crunch. The salmon may be slightly pink inside – this is ok – leave the salmon to rest for a few minutes and it will cook through further. Scrape the outside of the salmon with the back of a knife to remove any excess protein.
- Step 4
To make dressing: combine all dressing ingredients together.
- Step 5
To serve, flake salmon in large chunks, add eggs, beans, potatoes, olives and chives. Dress salad with dressing just before serving and enjoy!

260g Tassal Fresh Tassie Salmon portions
200g small chat potatoes, halved
150g small green beans, ends trimmed
2 eggs, hard boiled, peeled and cut into quarters
½ cup black olives
¼ cup fresh chives, chopped
¼ cup (60ml) extra virgin olive oil]
1 tsp Dijon mustard
2 Tbsp (40ml) fresh lemon juice
salt & pepper
2 Tbsp fresh dill, chopped
