Fig Smoked Salmon Pastry

Step 1

Preheat the oven to 200°C and line an oven tray with baking paper.

Step 2

Lay pastry out onto lined tray. Brush edges of the base with water and slightly fold the corners up to create an edge. Sit pastry on the baking sheet and prick base with a fork, then brush pastry all over with egg. Place in oven and bake for 8 minutes until slightly puffed.

Step 3

Remove pastry from oven and evenly spread onion marmalade. Then arrange goat's cheese, fig and asparagus, tomato over the top.

Step 4

Bake for a further 15 minutes, until pastry is golden and puffed.

Step 5

Remove from oven and place smoked salmon on top before serving.

375g sheet puff pastry
1 egg, lightly beaten
1/2 cup onion marmalade
300g goat’s cheese
1 bunch of asparagus
4 figs, quartered
½ cup cherry tomatoes
