Deep Dish Cauliflower & Salmon Pizza
- Step 1
Preheat oven to 200°C. In a pre-heated fry pan add olive oil and onion, cook for 2-3 mins. Add tomatoes and basil to the pan and bring to a boil. Reduce heat and simmer for 25 mins or until sauce has thickened. Scoop out the onion and basil and discard them.
- Step 2
Place cauliflower in a food processor and pulse 10-15 times, until it looks like rice. Cook cauliflower in microwave for 5 mins. Squeeze excess water from cauliflower by pressing between paper towels.
- Step 3
In a large bowl add cauliflower, eggs, 1 1/2 cups mozzarella cheese, dried basil, dried oregano, garlic, and red pepper flakes and stir to combine.

Pour cauliflower mix into a well-greased spring-foam pan. Use the back of a spoon to press and smooth into the pan, make sure to push the mixture up the sides of the pan to form edges.
- Step 5
Bake for 30 mins or until golden brown and set. Meanwhile in a pre-heated fry pan wilt the baby spinach. Remove base mixture from oven.
- Step 7
Top the crust with 2 cups mozzarella cheese, spinach, salmon and sauce. Bake for another 15 mins or until cheese is melted and bubbling.

Let stand 5-10 mins before slicing, serve & enjoy!

200g Tassal Tassie Smoked Salmon
1 tbsp olive or coconut oil
1 brown onion, peeled, chopped
1 can chopped tomatoes
1/2 bunch fresh basil
1 large cauliflower, cleaned, trimmed and cut into florets
3 1/2 cups lite mozzarella cheese
2 eggs, whisked
3 garlic cloves, minced
1 tsp dried basil
1 tsp dried oregano
1/8 tsp crushed red pepper flakes
5 cups spinach
