Baked Salmon Fish Fingers
- Step 1
Preheat the oven 220°C. Cut each piece of salmon in half across the width and then cut each half into equal-sized fingers down the length.
- Step 2
Use 3 shallow bowls and place the flour in the first, eggs in the second and breadcrumbs in the third. First dip the salmon fingers in the flour, then dip them in the beaten egg and finally in the breadcrumbs, until all salmon fingers have been coated.

Line a baking tray and place the salmon fingers on the tray and drizzle with olive oil.
- Step 4
Bake in the oven for 5-6 mins. Turn each salmon fish finger halfway through cooking; return to the oven until crisp, golden and cooked through.

Once cooked take out of the oven and serve with lemon and enjoy!

- 5 tbsp plain flour
- 2 eggs, beaten
- 2 tbsp vegetable oil
- 2 cups of breadcrumbs
- 1 lemon, cut into wedges
