
Salmon Spring Rolls with Tzatziki Dipping Sauce
Ingredients
2 Tassal Tasmanian salmon portions, skin off
6 spring onions, cut into lengths
1 tsp Masterfoods lemon & dill seafood seasoning
5 sheets nori, cut into 20 squares
20 spring roll wrappers
1 egg, beaten
Oil for frying
1 ½ cups tzatziki dip
Mint Leaves to serve
Method
Slice each portion into 10 strips. Lay one spring roll wrapper onto a flat surface & place a square of nori into the centre. Top the nori with a strip of Tassal salmon, sprinkle with a little seafood seasoning and top with a piece of spring onion. Turn the edges of the spring roll pastry into the centre, brush the surface with a little beaten egg and roll into a cylinder shape firmly. Repeat with remaining pastry, nori, salmon, seasoning & spring onions. Cook spring rolls in hot oil at 180˚C for 2 - 3 minutes until golden brown.
To Serve: Slice each roll diagonally and serve with tzatziki dip garnished with mint leaves.
Tassal Tip: For a healthier alternative, these delicious rolls can also be made with filo pastry and oven baked.
