Cajun Salmon Caesar Salad

Ingredients

4 Tassal Tasmanian salmon portions, skin off
2 Tbsp Cajun seasoning
2 tsp olive oil
1 baby Cos lettuce, cut into quarters
2 eggs, boiled for 6 minutes, peeled and cut into quarters
1 cup croutons
2 Tbsp shaved Parmesan
1 Tbsp mayonnaise


Method

Sprinkle salmon portions with Cajun seasoning. Heat non stick fry pan over medium heat. Add olive oil to pan and cook salmon for 3-5 minutes on each side. To serve, place lettuce, egg, croutons, mayonnaise and parmesan evenly across 4 plates, then Cajun salmon.
