Salmon with Herb Roasted Potatoes &
Wild Rocket
Ingredients
2 Tassal Quick & Healthy frozen
Tasmanian salmon fillets
200g chat potatoes
2 tbsp olive oil
50g wild rocket, washed
½ lemon
Chopped seasonal herbs
(such as dill, thyme or parsley)
Salt and pepper
Method
Defrost salmon overnight in the fridge or heat through in the microwave for 1 minute. Preheat oven to 200°C. Mix 1½ tbsp of olive oil with potatoes and season with salt and pepper. Put potatoes in the oven and roast for 20-30 minutes or until golden brown. Season salmon with salt, pepper and herbs. Pan fry for 4 minutes on each side and leave to rest for 2 minutes. Dress rocket with remaining olive oil and lemon.
