Have you tried infusing hearbs into Salmon?
Infuse a stock base or water with dry white wine with herbs and zest of citrus in a pot. Bring up to boiling point and then reduce to a simmer.
Poach fish on low to medium heat. Allow a cooking time of 6-8 minutes per 500g.
Infuse the water you poach the salmon in herbs to get that flavour through the fish as it poaches
Make sure the water is not boiling and instead is lightly simmering to ensure the fish doesn't cook to quick.
