BBQ

BBQ

Salmon is easy to BBQ due to the oil content.

Fillets
Preheat BBQ to medium heat and brush salmon with a little oil.  If the BBQ smokes it means that it is too hot.  Place salmon directly onto BBQ plate or wrap salmon in baking paper and foil.  Cook for 3 minutes on each side.

Whole salmon
To cook a whole salmon pre-heat a covered BBQ  for 10 minutes prior on a medium heat (170C).  Place the whole salmon on a large piece of baking paper and drizzle with oil and a little flaked salt.  Fill the inside cavity with fresh herbs (dill, parsley, lemon thyme) if you desire.  Place the salmon onto the BBQ turning off all the burners except the two at each end, reducing them to low.  Bake salmon for 20 minutes per kg.
