
Salmon Squares
Ingredients
2 x 185g cans Tassal Tasmanian salmon in Brine
300g pumpkin, peeled & diced
1 medium zucchini, sliced
50g semi dried tomatoes, sliced
12 Bocconcini cheese, halved
8 eggs, beaten
½ cup cream
1 tsp Italian seasoning
water cress sprigs, to garnish
Method
Pre-heat oven to 170°C. Remove salmon from the can and drain. Place the pumpkin, zucchini and semi dried tomatoes into a greased and lined 40 x 20 cm slice tin. Pour the beaten eggs, cream and Italian seasoning over the vegetables. Sprinkle the salmon and Bocconcini halves over the mixture. Bake in the pre-heated oven for 40 minutes. Cool in
the tin and slice warm or cold into small squares and serve garnished with sprigs of watercress.
