
Tasmanian Eggs
Ingredients
200g Tassal Quick & Healthy Tasmanian
smoked salmon
4 eggs
4 thick slices of sour dough bread
3 egg yolks
20ml white vinegar
¼ tsp salt
3 tsp horseradish
½ tsp sugar
100g butter, melted
2 tbsp boiling water
Method
Fill a non-stick frying pan ²/³ full with water and heat over a medium heat until small bubbles appear (do not boil). In the work bowl of a food processor place the egg yolks, vinegar, salt, horseradish and sugar. Pulse gently to combine. Break the eggs one at a time into the hot water and allow to cook until soft for 4 minutes. Whilst eggs are cooking toast the sour dough bread until golden. Pour the melted butter into the food processor and process until the butter is completely absorbed. Add boiling water to sauce just prior to serving.
