Favourite Salmon Dish
In the Tassal Pure Tasmania summer recipe book there is a great Moroccan grilled salmon and cous cous salad recipe. The combination of Moroccan seasoning, garlic, mint and yoghurt offset the cous cous, chickpeas, sweet potato and grilled salmon superbly. Two words to describe this dish: simple and delicious!
Pure inspiration
I don’t really follow celebrity chefs, but I do remember a documentary with Nigella Lawson and in it she referred to food being like the soul ,and that nourishment does not only come by eating but in sharing the experience. I know myself that some of the best entertaining experiences have been those ones where friends have just popped in spontaneously and you haven’t had to worry or stress over food for the last 3 hours. Maybe the art of sharing meals in our homes would see a resurgence, if we viewed food as a soulful experience.
Secret ingredient
I am not sure whether it’s a secret ingredient – but more a flavour I love. Cumin powder or cumin seeds really add a beautiful and distinct flavour to dishes. I have a wonderful dressing I put on a cous cous, currant and carrot salad and people are always impressed with the salad. In reality it is the dressing that adds to the salad.

Favourite Salmon Dish
Baked Salmon portions. A dead easy recipe with great results. Pan fry seasoned portions skin side down for a couple of minutes depending on thickness in a little grapeseed oil. Turn and repeat leaving the centre pink. Transfer to a moderate oven (180 degrees) and bake for 8 minutes. Serve on a salad of mixed lettuce varieties, feta cheese and lemon dressing with homemade oven baked chips on the side.

Ainsley Harriot. Ainsley is one of the most extroverted chefs I have ever seen. His presentation, although being madcap, contains all the practical information you require. He started out on television in England and has toured extensively visiting Australia several times.
Secret ingredient
Garlic is my favourite. Its flavour transforms most dishes and I use medium amounts to add flavour and not overpower the food.

Favourite Salmon Dish
A combination of lettuce, pineapple, orange and avocado enhanced by the addition of smoked roasted salmon. Spoon over a healthy fresh dressing of freshly squeezed orange juice sweetened with honey. A quick and easy healthy meal for a summer’s day incorporating the contrasting flavors of the fruits and the smoked succulent texture of the salmon.

Fresh Sweet Basil. A very versatile herb, used in recipes ranging from salads to stir-fry and is very compatible with tomatoes. When made into a pesto it is ideal to stir through Pasta.

Favourite Salmon Dish
Salmon mousse brioche
Take a large juiced lemon, 100g smoked salmon, 2 tablespoons chopped dill sprigs and 12 small brioche. Place cream cheese, 1/4 cup lemon juice and salmon in a food processor. Process until smooth. Transfer to a bowl. Stir in dill and season with salt and pepper. Cut the tops off brioche and set aside. Carefully hollow out brioche using a small, sharp knife. Spoon cream cheese mixture into brioche and cover with brioche tops. Bon appétit!

Favourite Salmon Dish
Atlantic Salmon Rillette - Serves 4 for entrée, takes 10 minutes plus 2 hours standing
200 g Atlantic salmon fillets skin off, pin-boned, 50 gm unsalted butter, 50 mls olive oil, 20 ml champagne vinegar, ½ bunch chives thinly sliced, 1 tsp lemon, 125 ml clarified butter, melted.
Buttered toasted bread, or melba toasts to serve.
Place salmon, butter, oil, vinegar and ½ tsp salt in a zip-lock bag. Bring a saucepan of water to a gentle simmer, add bag of salmon cover with a lid and turn off the heat. Stand for 10 minutes, then remove from bag and stand until fish is cool.
Drain liquid from salmon and finely flake flesh into a bowl, add chives, lemon juice and 50 ml of the clarified butter, season and combine well.
Divide mixture among four moulds and 6cm round rings and pat down lightly. Cover and refrigerate for 1 hour, then pour the remaining clarified butter into each mould and refrigerate for another hour. Serve with toasts and lemon slices.

Coriander - Fresh coriander is a great ingredient in all your Asian, Indian & Chinese dishes, stir fry’s, curries and salad as a flavoring and garnish.. You can also use coriander seeds which have a mild, fragrant aroma and aromatic taste and are used to flavor many foods.

Favourite Salmon Dish
Atlantic Salmon with seeded mustard and honey sauce: Pan fry salmon fillet, skin side first for 3 minutes (until crispy and golden). Turn over carefully; allow cooking for a couple of minutes. Salmon should still be pinkish in the middle. Set aside in warm place. Add finely diced shallot to pan with a knob of butter and gently cook, turn up heat and deglaze pan with white wine. Add a couple tablespoons of seeded mustard and a tablespoon of honey and stir through on medium heat till all mixed through. Serve fish on creamy mashed potato and drizzle sauce over.

Tetsuya Wakuda: a brilliant Australian chef with Japanese heritage. Tetsuya’s cuisine is unique, based on classic French techniques and using the Japanese philosophy of pure, clean and seasonal flavours. Elegant yet simple, his dishes are like works of art and look almost too good to eat but should be devoured, as they are absolutely delicious. Tetsuya’s, the restaurant, is regularly listed as one of the top ten restaurants in the world.
Secret ingredient
Paprika, I love this spice. In Australia you can buy Sweet Hungarian paprika or my favorite, Smokey Spanish Paprika in either sweet or hot. I use it in marinades; as a dry spice mix; my secret ingredient for ‘piri piri’; to flavour casseroles or sauces and sprinkled over home made dips such as humus. It has a distinctive flavour, a wonderful smokiness and is a spice that can cross many cultural boundaries.

Salmon can be cooked in so many different ways that it is very difficult to have just one favorite. I add different ingredients to complement different occasion, be it entrée or main or anything really. It is just so versatile.

Favourite Salmon Dish
Salmon San Choy Bow. It is very easy to prepare, it literally takes five minutes. The flavours are a little sweet because of the kecap manis sauce used. The recipe also has coriander, which I have always loved. Being a stir fry based meal it goes very well with steamed rice and salad or steamed veggies.

My favourite celebrity chef would have to be Manu Friedel, who regularly appears on Ready Steady Cook. He has a French background, but now lives in Australia. I am quite fond of his French accent, attitude and personality. Of course he is also a good cook! He cooks with a French influence, quite different to the way I do, and his meals look so exquisite and European. They are often very simple, but very tasty and well presented.
Secret ingredient
My all time favourite ingredient is Sweet Chilli Sauce. I use it in many stir fry recipes, as part of marinades, in salad dressing, and as a dip. It’s also great with terriyaki sauce. I think it’s great for people who like a bit of chilli flavour, without being too overpowering. It gives a nice kick of flavour and sweetness to a meal.

Crispy skin salmon on pesto mash with a black olive salsa. This is a simple but delicious Mediterranean dish that is a summer menu favourite of mine.

Anthony Bourdain. He is the executive chef at Brasserie Les Halles in New York City and specialises in French cooking. He has written fiction and non-fiction stories about his time as a chef and his travels around the world where he discovered different cuisines. I admire him for his New York City attitude, his 20 plus years as a head chef and his culinary knowledge.
Secret ingredient
Pesto is without a doubt my secret ingredient, as it is so versatile and tasty. Pesto can be used as a garnish, tossed through a stir fry or salad, added to a sandwich as a spread or even used as a marinade. The taste of pesto packs a punch and it has an outstanding ability to dress up any dish. It is simple to make, requiring only a few quality ingredients, and nothing beats the taste of freshly made pesto.

Moroccan Hot Pot, a really easy dish to cook from the Tassal Winter recipe book. The spicy and aromatic Mediterranean flavours compliment the delicate taste of salmon. The combination of chickpeas, tomatoes and purple onion make it an exotic dish, perfect for entertaining.

Steamed Asian Salmon from Tassal Winter Recipe Collection. I love this dish as I have a Scottish background and grew up eating a lot of steamed fish. I tried the Asian version and really liked it the overall flavour (sorry Mum!).
This dish is prepared using a wok and bamboo steamer, and incorporates ginger, lime zest and juice and lemongrass. Serving with Asian greens gives that additional taste to this dish, as does adding sweet chilli, soy or fish sauce.

Jamie Oliver, as he displays a great level of energy and enthusiasm towards food and cooking. His compassion towards those less fortunate is admirable also. Jamie is from the UK and allows his cooking to include a variety of flavours, tastes and inspirations, using a large array of both common and unique ingredients, making his cooking styles relevant to many worldwide.

San Choy Bow – its combination of texture, aromatics and colour makes for a great taste sensation. The chilli, garlic, coriander and a touch of spice and sweetness meet all the criteria for a great meal. The fried noodles, water chestnuts and crisp lettuce add great crunch and texture. Red capsicum, spring onions and the main ingredient of succulent fresh Tassal Atlantic Salmon make for a delicious meal.

Garlic – I add it to most of my dishes. It will compliments most ingredients, especially when combined with other aromatics it adds a distinct flavour and aroma. It is such a universal ingredient and used by many cultures around the world, and also for medicinal purposes. Roasting gives it a mellow and subtle flavour.

My favourite Tassal salmon dish is smoke roasted salmon, asparagus and goats cheese risotto, very similar to the recipe from the spring recipe book with a couple of my favorite ingredients thrown in for that extra seasonal hit!

My favorite celebrity chef is none other than Gordon Ramsay. As an apprentice Chef watching his first series "Boiling Point" I was inspired to learn that there was more than meets the eye in a commercial kitchen. His elegant choice of words aside, no one can question his ability and passion.

I have two very basic secret ingredients; sea salt and fresh herbs. Salt is what sets professional cooking apart from home cookery and fresh herbs, readily available add a great colour and flavour to any dish!

Favourite Salmon Dish
Pan seared salmon fillet with a parmesan and caper gratarn on a nest of fresh rocket leaves finished with a citrus butter sauce. This is a fairly straight forward dish as you can prepare the gratarn ahead of time and heat when needed. Next place the cooked fillet across the nest of seasoned rocket leaves and gratarn, with the salmon pan add a squirt of citrus, heat to a boil then take of heat and finish with butter apply over salmon. The delicate flesh of the salmon fillet goes well with the smooth potato enhanced by the caper with the nutty rocket leaves and sharp but cool butter sauce.

Anthony Bordain, all American originally born in Chicago, he uses classical cooking techniques with a not to messed with passion and flair for food.
Secret ingredient
Keeping it simple, fresh rocket leaves they work well with all seafood dishes as you chew the leaves release a mild nutty flavor.
